- 1 ¼ cups light brown sugar
- ¼ cup cocoa powder
- ⅔ cup water
- 2 cups all-purpose flour
- 2 tsps Baking powder
- ½ tsp baking soda
- ½ tsp salt
- ½ cup butter
- 2 eggs (beaten)
- 1 tsp vanilla extract
- ⅔ cup Sour cream
- 1 cup Chocolate chip

Preparation steps
1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Grease a 20cm|8" deep loose-based cake tin and line the base with non-stick baking paper.

Put 75g|3 oz of the brown sugar into a pan with the cocoa and water. Stir over a low heat until the sugar has dissolved, then simmer gently for 2 minutes. Remove from the heat.

Sift together the, flour, baking powder, bicarbonate of soda and salt.

Beat the remaining sugar with the butter in a mixing bowl until light and creamy. Gradually beat in the eggs and vanilla.

Fold in 1/2 the cocoa mixture, then 1/2 the dry ingredients, followed by 1/2 the soured cream until blended. Repeat the process. Stir in about 1/2 the chocolate chips
6.
Put into the tin and bake for about 1 hour until a skewer inserted in the centre comes out clean. Sprinkle with the remaining chocolate chips and cool in the tin for 5 minutes, then place on a wire rack to cool completely.
