- ¼ cup Rice milk (or almond milk)
- 1 tsp Cider vinegar
- 1 ripe Pear (peeled, cored and chopped)
- 1 Tbsp lemon juice
- ½ cup vegan Margarine
- ½ cup sugar
- 2 very ripe Banana (mashed well)
- 2 ozs vegan Dark chocolate (melted and cooled)
- ⅓ cup sweet rice flour
- ⅓ cup sorghum flour
- 3 Tbsps cocoa powder
- 1 ¼ tsps gluten-free Baking powder
- 1 Tbsp grated Chocolate

Preparation steps
1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Grease a 450g|1lb loaf tin.
2.
Mix together the milk and vinegar and set aside.
3.
Beat together the margarine and sugar in a mixing bowl until light and creamy. Add the mashed banana gradually, beating well after each addition.

Add the melted chocolate and beat until smooth. Add the milk mixture and beat until incorporated.
5.
Add the flours, cocoa and baking powder and beat until blended.
6.
Pour into the tin and smooth the top. Sprinkle with the pears.
7.
Bake for 30-40 minutes until cooked through. Cover with foil if the cake is browning too much as it cooks. Sprinkle the top of the warm cake with a little grated chocolate. Cool in the tin for 15 minutes, then place on a wire rack to cool completely.
