- ½ cup butter
- ½ cup sugar
- 3 eggs (separated)
- 1 pinch salt
- 1 ¾ cups all-purpose flour
- 1 tsp Baking powder
- ⅓ cup Almond flour
- 3 small, very ripe Banana
- 1 Tbsp lemon juice
- 3 ½ ozs Dark chocolate (70% cocoa solids)
- ⅜ cup cream (38% fat)

1 Cutting board, 1 Large knife, 1 Bowl, 1 Small knife, 1 Tablespoon, 1 Measuring cups, 1 Wooden spoon
Preparation steps
1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Butter a 750g|1 3/4lb loaf tin.
2.
Beat the butter and sugar in a mixing bowl until fluffy. Gradually beat in the egg yolks until smooth.
3.
Whisk the egg whites with the salt until stiff.

Sift the flour and baking powder into the egg whites and gently stir in with the ground almonds until incorporated.
5.
Mash the bananas with the lemon juice and fold into the butter mixture. Gradually fold in the egg white mixture until thoroughly blended.
6.
Spoon into the loaf tin and bake for about 45 minutes until golden and risen. Cool in the tin for 10 minutes, then place on a wire rack to cool completely.
7.
Melt the chocolate and cream in a heatproof bowl over a pan of simmering (not boiling) water. Cool until thickened and spreadable.
8.
Spread over the top of the cake and decorate with banana chips. Leave to set.
