- 3 very ripe Banana
- 1 cup granulated sugar
- 2 eggs
- 1 ½ cups flour (plus 2 tablespoons to dust the blueberries)
- 1 tsp ground cinnamon
- 1 tsp baking soda
- ½ tsp salt
- 1 ½ cups fresh Blueberries
- ½ cup shelled Walnut (chopped)
- ¼ cup unsalted butter (melted)

Preparation steps
1.
Preheat oven to 325º F. Lightly grease a standard loaf pan.

In a medium bowl, mash the bananas. Add sugar and eggs and beat lightly until blended. Add flour, cinnamon, baking soda, and salt, mixing to incorporate all ingredients.

Dust the blueberries lightly with flour. Stir in the blueberries, walnuts and melted butter. Pour batter into prepared loaf pan, using a rubber spatula to scrape the sides of the bowl.
4.
Bake for one hour or until a wooden toothpick inserted into the center of the bread comes out clean. Cool in the pan for about 10 minutes. Turn out onto a wire rack to cool. Slice and serve.
