Preparation steps

Rinse the clementines in hot water and dry thoroughly. Cut the peel as thin as possible (ensuring you don't remove bitter white pith with the peel). Julienne the peel and place in a bowl. Remove the white pith from the orange, and separate the whole fruit segments. Add to the bowl and sprinkle with sugar. Slit the vanilla bean lengthwise and scrape out the seeds. Add the vanilla and coffee powder to the clementine mixture. Crush with a potato masher and let rest until the sugar has dissolved, stirring occasionally.

Transfer the mixture to a bottle or carafe, pour in the vodka, and seal. Let infuse in a cool and dark place for 2 months. Strain the liqueur through a colander lined with cheesecloth and place in prepared bottles.

Serve over ice, garnished with slices of clementine and mint leaves.
