1 Vanilla bean
800 milliliters milk
60 grams sugar
3 heaping Tbsps cornstarch
3 eggs
1 pinch salt

Preparation steps

1.

Slice the vanilla bean lengthwise and scrape out the seeds. Combine the seeds with about 100 ml of milk in a saucepan. Bring to a boil and stir in the sugar. Whisk the remaining milk with the cornstarch until smooth and stir into the saucepan. Separate the eggs.

Remove the milk from the heat and whisk the egg yolks with a bit of the hot milk. Slowly whisk the tempered egg yolks back into the saucepan and stir until slightly thickened. Strain the mixture through a fine mesh sieve.

Beat the egg whites with a pinch of salt until stiff. Fold the egg whites into the custard mixture and pour into serving ramekins.

Cover and refrigerate for at least 1 hour before serving.
