- 2 Tbsps Crème fraiche
- 4 Tbsps cream
- 2 Tbsps sunflower oil
- 2 Tbsps Walnut oil
- sugar
- 3 Tbsps lemon juice
- 1 small Celeriac (celery root)
- 2 Pear (finely sliced)
- 1 ¾ cups whole Walnut (roughly chopped)

Preparation steps
1.
For the dressing, stir together the crème fraîche, cream, oils, salt, ground black pepper, sugar and lemon juice, adjusting the seasoning to taste.
2.
In a bowl, mix the dressing through the celeriac and pear slices. Arrange in four small bowls and serve garnished with walnuts, cress and celery leaves.
