This souffle tastes delicious with the addition of vanilla ice cream.

Ingredients

4 ozs dark Chocolate
3 Tbsps butter
3 Tbsps Pastry flour
10 ozs milk
3 Tbsps sugar
3 egg yolks
4 egg whites
powdered sugar (for molds)
butter (for molds)
For serving
6 Soufflé dishes
powdered sugar

Preparation steps

For the soufflés, finely chop the chocolate. Grease and sugar the souffle molds. Melt butter in a saucepan. Add the flour and cook, stirring frequently, for 2 minutes. Whisk in the milk. Add the chocolate and 2/3 of the sugar and stir until the sugar has dissolved. Remove from the heat. Stir in the egg yolks, one at a time. Beat the egg whites until very stiff with the remaining sugar. Fold the egg whites into the chocolate mixture. Fill the soufflé molds with batter and bake in a preheated 175°C / 350°F for 25 to 30 minutes.

Dust soufflés with powdered sugar, using a heart-shaped stencil if desired. Serve immediately.
