Clams Au Gratin

- 1 kilogram clam
- salt
- 4 Tomatoes
- 1 garlic clove
- 1 Tbsp Caper (packed in salt)
- 75 grams breadcrumbs
- 2 Tbsps olive oil
- 3 Tbsps grated Cheese (such as Pecorino)
- 2 eggs
- Red pepper flakes
- Dill (for garnish)
Preparation steps
Rinse clams thoroughly. Fill a pot with 2-3 cm (approximately 3/4 to 1 inch) salted water. Bring to a boil. Add clams, cover, and simmer until clams have opened, about 5 minutes. Discard any clams that have not opened. Remove clams from shells and separate each shell into two halves. Fill empty shells with cooked clams and place in an ovenproof dish.
Preheat broiler.
Blanch tomatoes in boiling water, remove skins, quarter and finely dice. Peel and finely chop garlic. Rinse capers thoroughly and coarsely chop. Mix garlic and capers with diced tomatoes.
Mix breadcrumbs with olive oil, cheese, and eggs until well combined. Stir in tomato mixture and season with salt and red pepper flakes. Divide breadcrumb mixture over clams and broil, watching carefully, until golden-brown, about 5 minutes. Garnish to taste with dill.
