9 cups clam
2 shallots (peeled and diced)
2 cloves garlic cloves (peeled and halved)
4 Tomatoes (skinned, deseeded and diced)
2 sprigs thyme (leaves picked from the stalks)
½ green Bell pepper (cored and finely diced)
½ red pepper (cored and finely diced)
½ yellow pepper (cored and finely diced)
3 Tbsps olive oil
2 Tbsps butter
cup dry white wine
14 ozs Spaghetti
cup fish stock
Basil (chopped)

PREPARE THE CLAMS

Clean and wash the clams.

COOK THE CLAMS

Heat the oil with 1 tsp butter and briefly sweat the shallots, garlic and thyme. Deglaze with white wine and add the drained clams. Cover and cook for about 5 minutes, until the shells have opened. Drain the clams, but catch the cooking liquid. Leave a few clams in their shells to garnish and take the rest out of their shells; discard any clams that have not opened.

COOK THE SPAGHETTI

Meanwhile cook the spaghetti in plenty of boiling, salted water until al dente. Drain well.

COOK THE VEGETABLES, MIX AND SERVE

Heat the rest of the butter and sweat the diced tomatoes and peppers. Add the clam cooking liquid and fish stock and bring to the boil. Add the basil and simmer for a further 3 to 4 minutes. Then add the pasta, mix and reheat gently. Season to taste. Finally add the clams and heat through. Sprinkle with a little pepper and serve immediately.
