1 Ciabatta (Italian White bread)
125 grams Roquefort cheese
4 Tbsps Yogurt (0.1% fat)
salt
peppers (freshly ground)
4 Tbsps olive oil
400 grams Pork tenderloin
3 Tomatoes
1 bunch Arugula (or another type salad)
olive oil (for drizzling)
ground paprika (for dusting)

Preparation steps

1.

Stir half of the cheese with the yogurt until smooth. Season with salt and pepper. Cut remaining cheese into slices.

Warm bread in the oven.

Rinse and slice tomatoes.

4.

Rinse, trim and spin arugula dry. Remove any thick stems.

Cut pork tenderloin crosswise into 1 cm (approximately 1/2 inch) thick slices. Season slices with salt and pepper. In batches, fry pork in hot oil, about 1-2 minutes per side. Keep warm.

Cut ciabatta into 4 thick slices, then slice each in half crosswise.

7.

Layer half of bread slices with arugula and tomatoes. Season with salt and pepper and sprinkle with a few drops of balsamic vinegar and olive oil. Top with pork, yogurt-cheese sauce, and cheese slices. Sprinkle with a little paprika and top with remaining slices of bread. Serve immediately.
