- 1 ⅓ cups very fresh Salmon fillet (diced)
- 1 shallot (finely chopped)
- 1 Lime (juiced, zest grated)
- 2 Tbsps grapeseed oil
- ½ bunch Basil (leaves chopped)
- ⅞ cup Crème fraiche
- 4 Tbsps Yogurt
- 4 Scallop
- 4 sticks Lemongrass
- crushed Red pepper flakes
- 1 Tbsp butter
- Lime wedge (to garnish)
- Toast star (optional)

Preparation steps
1.
Mix together the fish, shallot, lime juice and zest and the grape seed oil. Season with sea salt and ground black pepper.
2.
Mix together the basil, crème fraîche and the yogurt. Season with salt.
3.
Skewer each scallop onto a lemongrass stick. Season with salt, ground black pepper and chilli flakes and fry in hot butter for a minute on each side until golden brown.
4.
Place the basil cream into four glasses, arrange the salmon tartare on top and serve with the scallops and the lime wedges. If desired garnish with toast stars.
