200 grams Pastry flour
100 grams cold butter
50 grams sugar
1 egg
Parchment paper (for blind baking)

300 grams Dark chocolate
2 Tbsps Crème fraiche
75 grams softened butter

Preparation steps

For the dough, mix the pastry flour with sugar and salt and make a well in the center. Cut the cold butter into small pieces transfer to the well with the egg and add approximately 30 ml (approximately 2 tablespoons) of lukewarm water. Cut together with two knives or a pastry cutter until the texture of coarse meal. Knead with hands quickly into a disc, cover with plastic wrap and refrigerate for 30 minutes.

Roll the dough out on a lightly floured surface and line the greased tart tin with it. Cut parchment paper to size, put on the dough, top with baking beans and bake in a preheated 160°C (approximately 320°F) oven for 20-25 minutes. Remove baking bean and baking paper and let to cool completely.

For the filling, melt the crushed chocolate over a hot water bath. Warm the crème fraîche in a saucepan and stir into the melted chocolate, then gradually stir in the softened butter. Evenly spread the chocolate mixture on the tart dough until smooth and let cool.  

For the garnish, dust with cocoa before serving.
