- 100 grams dark Chocolate (70% cocoa)
- 2 tsps Rum
- 2 tsps Crème fraiche
- 4 egg yolks
- 2 Tbsps sugar
- 6 egg whites
- 1 Tbsp Pastry flour
- butter (for molds)
- brown sugar (for molds)
- Raspberries (for garnish)
- powdered sugar (for dusting)

Preparation steps

Chop the chocolate into small pieces and combine with the rum and creme fraiche in a metal bowl. Melt slowly over a hot water bath. Set aside and let cool. Beat yolks and sugar until creamy. Continue beating while slowly adding the chocolate. Sift flour over mixture and fold in. Beat egg whites until very stiff snow and carefully fold into mixture.

Bake soufflés in preheated oven at 180°C (approximately 350°F) convection, for about 15 minutes. Do not open the oven door while baking is in progress!

Serve soufflees immediately, garnished with raspberries and sprinkled with powdered sugar.
