½ untreated lemon (juice and peel)
2 cups dry white wine
½ cup sugar (scant)
1 tsp freshly grated ginger
½ Cinnamon stick
2 Tbsps Poppy seeds
For the sauce
3 ½ ozs dark Chocolate couverture (approx. 70 % cocoa solids)
4 tsps Pear brandy
1 Tbsp cream (at least 30 % fat)

1 Cutting board, 1 Small knife, 1 Large knife, 1 Small bowl, 1 Bowl, 1 Tablespoon, 1 Citrus juicer, 2 Plates, 1 Teaspoon

Preparation steps

Peel and core the pears. Squeeze the lemon and immediately sprinkle the pears with the juice. Put the wine into a pan with the sugar, ginger, cinnamon and lemon peel and bring to the boil. Add the pears and poach for 4-5 minutes, depending on the ripeness of the fruit. Leave the pears to cool in the poaching liquid.

Chop the chocolate and melt over a low heat with the pear brandy and cream, stirring constantly.

Sprinkle the pears with poppy seeds and place on plates. Fill the pears with chocolate sauce and serve.
