400 milliliters white wine
2 tsps grated ginger
1 pinch Saffron
4 small, ripe Pear
2 Tbsps sugar
100 grams Dark chocolate (about 60% cocoa)
50 milliliters Whipped cream

Preparation steps

Dissolves sugar in a glass of water. Pour sugar water into a pot, add ginger and saffron and simmer for 1-2 minutes. Peel pears, reserving stalks, and immediately sprinkle with lime juice. Add wine and pears to the pot and simmer, covered, for about 10 minutes or until pears are al dente (do not overcook). When stewing, occasionally sprinkle pears with marinade.

Remove pears and let cool. Strain marinade through a sieve and  reduce, simmering, to 50 ml (approximately 1/5 cup).

Chop chocolate. Combine marinade with cream and chocolate. Melt over hot water bath, stirring. Cool until ready to serve. Arrange pears on dessert plates and serve with chocolate sauce.
