Ingredients

For the dough
350 grams Pastry flour
80 grams sugar
200 grams cold butter
1 egg yolk
20 grams honey
For the topping
200 grams Hazelnuts
200 grams almonds
50 grams Walnut
1 tsp cinnamon
1 tsp honey
2 Tbsps Whipped cream
2 egg whites
100 grams Dark couverture chocolate (60% cocoa)

Preparation steps

For the dough: Combine flour and sugar mix on the work surface. Create a well in the middle and add pieces of butter, egg yolks and honey. Knead into a smooth dough. Wrap in plastic wrap and chill for 30 minutes.

For the topping: Coarsely chop nuts and mix with cinnamon. Stir in cream and egg whites stir and chill.

Preheat oven to 180°C (approximately 350°F). Roll out dough on a lightly floured surface to about 30 x 40 cm (approximately 12 x 16 inches) and spread topping onto dough. Bake for 30-35 minutes.

Remove from oven and cut into bars. Let bars cool on a wire rack. Chop chocolate and melt over a double boiler. Dip the corners of bars into the melted chocolate and let cool. Serve at room temperature.
