8 ozs Ginger jam
56 pcs whole milk chocolate shell
6 ozs Milk chocolate couveture

Preparation steps

1.

Drain ginger and mince. Set a quarter aside for garnish. Combine remaining ginger and ginger jam. Let soak overnight, uncovered.

Pour ginger mixture into a piping bag and fill shells to just below the rim. Let rest 15 minutes.

3.

Melt crushed chocolate in a double boiler, then let cool slightly. Pour chocolate into a piping bag and top ginger mixture with chocolate, sealing the candies. Top each chocolate with a piece of ginger. Chill chocolates to set. Serve once hardened.
