- 1 ½ cups all-purpose flour
- ⅓ cup cocoa powder
- 1 tsp baking soda
- ¼ tsp salt
- 1 cup sugar
- ½ cup sunflower oil
- 1 cup water
- 2 tsps vanilla extract
- 2 Tbsps Cider vinegar
- To serve and decorate
- Ginger biscuit

Preparation steps
1.
Heat the oven to 190°C (170° fan) 375°F gas 5. Grease a 23cm|9" cake tin and line the base with non-stick baking paper.
2.
Sift the flour, cocoa, bicarbonate of soda, salt and sugar into a mixing bowl and stir to combine. Make a well in the centre.
3.
Mix together the oil, water and vanilla.
4.
Pour into the well and whisk until smooth. Quickly stir in the vinegar until blended.
5.
Put into the tin and bake for 25-30 minutes until cooked through. Cool in the tin for 10 minutes, then place on a wire rack to cool completely.
6.
Finely crush some of the ginger biscuits and sprinkle over the cake.
