- soft butter (for the tin)
- breadcrumbs (for the tin)
- 1 cup softened butter (scant)
- ⅔ cup sugar
- 2 Tbsps Vanilla sugar
- 1 unwaxed Orange (zest)
- 3 eggs
- 3 cups all-purpose flour
- 1 tsp Baking powder
- ½ cup Corn starch
- 1 tsp Ginger powder
- ⅕ cup cocoa powder
- ½ tsp ground cinnamon
- ½ cup milk
- 1 ¾ ozs crystallized ginger (finely chopped)
- 1 ¾ ozs candied Orange peel (finely chopped)

Preparation steps

Heat the oven to 180°C (160°C in a fan oven), 375°F, gas 5. Brush the loaf tin with butter and sprinkle with breadcrumbs.

Cream together the butter, sugar, vanilla sugar, orange zest and a pinch of salt. Add the eggs one at a time, beating after each addition. Mix together the flour, baking powder, cornflour and spices and stir into the mixture, alternating with the milk, until you have a smooth mixture which holds together.

Incorporate the chopped ginger and orange peel into the mixture and transfer to the loaf tin. Smooth the top flat and bake in the oven for around 50 minutes (cocktail stick test).
4.
Remove from the oven and leave to cool slightly, then turn out of the tin and leave to cool completely on a wire rack.
