150 grams Dark chocolate
300 grams Pastry flour
3 Tbsps cocoa powder
2 tsps Ground cinnamon
100 grams sugar
200 grams cold butter
1 egg
75 grams coarse-grained sugar

Preparation steps

Chop the chocolate into small pieces. Mix the flour, cocoa powder, chocolate, 1 teaspoon of cinnamon and sugar on a work surface. Form a well in the center. Chop the butter into pieces and distribute around the flour. Beat the egg and pour into the middle. Add 2-3 tablespoons of cold water and chop everything well. Quickly knead the ingredients into a smooth dough, wrap in plastic and chill for about 30 minutes.

Preheat the oven to 180°C (approximately 350°F). Line a baking sheet with parchment paper.

Divide the dough into thirds and form each third into a 5 cm thick roll. Place the dough onto the baking sheet and flatten slightly. Bake for about 10 minutes. Remove and cool briefly. Cut  into 1.5 cm thick pieces and place back on the baking sheet. Bake for 15 minutes, until crispy.

Mix the remaining cinnamon with the coarse sugar. Roll the hot cookies in the cinnamon sugar. Place on a wire rack and leave to cool.

Serve warm.
