- ⅓ cup unsalted butter
- ½ cup chopped semi-sweet chocolate
- 1 large egg
- ¾ cup dark brown sugar
- ½ cup Sour cream
- ⅛ cup milk
- 1 tsp vanilla extract
- ¾ tsp baking soda
- 2 ¼ cups all-purpose flour
- ¼ cup cocoa powder
- ⅓ cup Chocolate chip
- For the filling
- 3 ½ ozs white Marshmallow
- ¼ cup milk
- ½ cup unsalted butter

Preparation steps
1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Line 3 large baking trays with non-stick baking paper.

Melt the butter and chocolate in a heatproof bowl over a pan of simmering (not boiling) water.

Whisk the egg and sugar until thick and light.
4.
Whisk in the chocolate mixture, soured cream, milk and vanilla extract.
5.
Sift in the bicarbonate of soda, flour and cocoa, stirring gently until incorporated. Stir in the chocolate chips.

Drop 2 tablespoons of the mixture at a time onto the baking trays, keeping them about 4 cm|2" apart.
7.
Bake for 12-15 minutes, until firm to the touch. Cool on the baking trays for a few minutes, then place on a wire rack to cool completely.
8.
For the filling: heat the marshmallows and milk together in a pan over a low heat, stirring all the time until the marshmallows have melted and the mixture is smooth.
9.
Beat the butter until soft and creamy. Gradually beat the butter into the marshmallow mixture until smooth.
10.
Spread the flat side of a cold cake with a generous amount of filling. Place another half, flat side down, on top of the filling then press both halves together lightly.
