- 600 grams Pork (Loin or fillet)
- 3 Tbsps vegetable oil
- 20 grams dried Morel
- 1 Leek
- 200 grams Bamboo shoots (canned)
- 1 tsp ginger (freshly grated)
- 2 garlic cloves (chopped)
- 1 Tbsp brown sugar
- 1 Tbsp cornstarch
- 4 Tbsps Rice wine
- 2 Tbsps spicy Bean paste
- soy sauce
- cayenne pepper

Preparation steps
1.
Soak morels according to package directions. Rinse and drain. Reserve the mushroom water.

Rinse pork, pat dry and cut into thin strips.
3.
Rinse, trim and chop leeks.
4.
Rinse bamboo shoots and drain.
5.
Sauté pork in hot oil. Add leeks, garlic, bean paste, ginger and some of the water from the morels. Simmer about 2 minutes, adding more water if necessary. Stir cornstarch into rice wine and add to the pork and leeks. Add morels, sugar and bamboo shoots and season with soy sauce and cayenne pepper.

Serve over rice in bowls.
