- 2 Tbsps butter
- 1 onion (peeled and finely chopped)
- 4 cups Arugula
- ½ head Lettuce (finely chopped)
- 4 cups chicken stock (or vegetable broth)
- ½ cup Crème fraiche
- salt
- peppers
- ½ lemon juiced (optional)
- In addition
- ¾ cup fresh Mozzarella (cubed)
- 2 Tbsps sun-dried tomatoes (cut into strips)
Preparation steps
1.
Heat the butter in a pan and add the onion. Sweat without colouring until softened.

Stir in the rocket and lettuce, then add the stock. Simmer for five minutes. Liquidise in a blender until smooth.
3.
Return to the heat and stir in the crème fraîche and seasoning. Add a little lemon juice if desired.
4.
Serve garnished with cubed mozzarella and strips of sun-dried tomatoes.
