- 2 tsps olive oil
- 8 ozs boneless Chicken breasts (cut into 1 inch pieces)
- kosher salt (to taste)
- freshly ground Black pepper (to taste)
- 2 tsps Cajun seasoning
- 2 cloves garlic cloves (minced)
- 1 can diced Tomatoes
- 16 ozs Pasta (cooked according to package instructions)
- Chili flakes (to taste, optional)
- flat leaf parsley (to garnish)

Preparation steps
1.
Heat a large pan with olive oil over medium-high heat. Generously season chicken with salt and pepper; add to pan. Saute chicken until browned. Stir in the Cajun seasoning, and garlic and continue to cook for another minute.

Stir in the diced tomatoes and simmer until the chicken is completely cooked and sauce has reduced a little.

Add in the cooked penne; stir and cooked until all is well combined and heated through. Season with chili flakes, if desired. Spoon into serving bowls, garnish with fresh parsley and serve.
