- 2 Tbsps butter
- 4 onions (halved and finely sliced)
- 2 cloves garlic cloves (finely chopped)
- 4 tsps sherry
- ⅜ cup vegetable stock
- 2 ¼ cups cooked Chicken breasts (from a roast chicken, shredded)
- ⅜ cup milk (skimmed)
- ⅞ cup cream
- Corn starch (as required)
- 6 cups Gnocchi (from the chiller)
- ¼ bunch parsley (roughly chopped, reserving a few leaves for garnish)

Preparation steps
1.
Heat the butter in a pan and fry the onions and garlic until soft. Add the sherry and stock and simmer for 5 minutes.
2.
Add the chicken and pour in the milk and cream. Season and simmer gently for a further 5 minutes. Add cornflour as necessary to thicken the sauce.
3.
Cook the gnocchi in plenty of salted water according to the instructions on the packet. Drain and mix through the sauce. Stir in the chopped parsley and arrange the gnocchi in bowls.
4.
Serve sprinkled with ground black pepper and garnished with parsley.
