Chicken with Mint and Couscous

Place the couscous into a bowl, add the boiling stock and leave to soak for 10 minutes.
Quickly fry the onion and garlic in 1 tbsp olive oil, then cool slightly and add to the couscous. Add the herbs and cucumber and drizzle with oil and lemon juice. Mix well and season to taste with salt, ground black pepper and honey.
Season the meat with salt and ground black pepper and fry quickly in a little oil ifor about 1–2 minutes on each side. Add to the salad and serve.
