- 15 leaves Lemon balm
- lemons
- 1 garlic clove
- 1 Tbsp Crème fraiche
- 500 grams smoked Chicken breasts (cut into thick slices (3 mm))

Preparation steps

Rinse beans and blanch 4-5 minutes. Drain. Rinse lemon balm leaves and spin dry. Mash beans and lemon coarsely. Season with salt and pepper. Add 4 tablespoons olive oil and lemon juice. Peel garlic and squeeze through garlic press. Add garlic and stir thoroughly. Add creme fraiche, stir and season again with salt and pepper.

Cut bread into very thin slices and toast under the broiler, watching carefully, until golden brown. To serve, brush toast with olive oil and cover each piece of toast with a slice of chicken breast and 1 tablespoon bean puree. Garnish with beans and lemon balm as desired.
