1 red onion
2 sprigs thyme
1 Tbsp olive oil
1 Tbsp White vinegar
1 Tbsp honey
salt

10 ozs Mangoes (1 small)
1 handful Arugula
4 slices Whole Wheat Toast
4 ozs cream cheese
7 ozs smoked Chicken breasts (sliced)
½ tsp smoked ground paprika

Preparation steps

1.

Peel the onion and cut into fine cubes. Wash thyme, shake dry and pluck off leaves. Mix both with oil, vinegar and honey in a bowl, season with salt and pepper.

Peel the mango and cut the flesh from the core and into thin slices. Wash arugula, spin dry and if necessary pluck the stems a little.

3.

Toast slices in a toaster for 4-5 minutes. Spread cream cheese on toasts. Spread arugula on cream cheese, top with chicken breast slices. Spread mango slices on top of chicken. Drizzle toasts with the onion-honey salsa and sprinkle with smoked paprika.
