Chicken Thighs with Garlic, Lemon and Thyme
The chicken drumsticks score with plenty of high-quality protein. We need this in our body as a building material for muscles, cells, messenger substances and hormones. The garlic not only gives the dish a spicy taste, but also brings an extra portion of essential oils which are able to fight bacteria and viruses that cause illness.
This dish pairs beautifully with some brown rice and a simple side salad.
Preheat the oven to 180°C (approximately 350°F).
Rinse the lemon, wipe dry and cut into small slices. Press the garlic through a garlic press. Peel the onions and cut in half lengthwise or quarter if large.
Rinse the chicken, pat dry, and rub with salt, pepper and paprika. Heat the oil in a skillet and sear the chicken until golden brown. Lift the chicken from the pan and set aside. Add the onion, garlic and the lemon to the pan and saute, turning occasionally. Pour in the wine and the broth and season with salt and pepper. Return the chicken to the pan along with the herbs, cover and place in the oven. Cook until the chicken is cooked through, 30-35 minutes.
