- ½ chicken (cut into four pieces)
- all-purpose flour
- 2 Tbsps clarified butter
- ½ cup white wine
- 2 Saffron
- cinnamon
- ⅓ cup almonds (chopped)
- ¼ cup milk
- 1 ⅓ cups potatoes (quartered)
- 2 carrots (sliced)
- 3 small onions (finely chopped)
- 4 cloves garlic cloves (finely chopped)
- 2 sprigs oregano (finely chopped)
- 2 sprigs thyme (finely chopped)
- Celery (finely chopped)
- 1 bay leaf
- For the picada
- ¼ cup almonds (chopped)
- 1 clove garlic cloves (finely chopped)
- ½ Tbsp fresh oregano (finely chopped)
- ½ Tbsp fresh parsley (finely chopped)

Preparation steps

Season the chicken with salt and ground black pepper and dust with flour. Fry in the clarified butter on all sides on a high heat.

Mix together the wine, saffron, a pinch of cinnamon, almonds and milk. Place the chicken, vegetables, onion, garlic and herbs in a pressure cooker. Add the milk milk mixture and cook for 10 minutes.
3.
To make the picada, dry roast the almonds. Mix all the ingredients together and sprinkle over the chicken just before serving.
