Chicken Noodle Soup

- 1 chicken (about 1.2 kilograms)
- 1 onion
- 1 bunch Soup vegetables
- 1 bay leaf
- 10 peppercorns
- 1 pc Mace
- 3 sprigs parsley
- 100 grams soup noodles
- 1 Tomato
- 200 grams Peas
- salt
- peppers
- Lovage (for garnish)
Preparation steps
Rinse the chicken well. Put the chicken in a soup pot and cover with cold water. Peel and halve the onion. Fry, cut side down, in a nonstick pan. Rinse the soup vegetables and cut into pieces. Add the spices and parsley. Add the vegetables to the chicken. Slowly heat until it boils. Skim off the foam and simmer over low heat for about 1 hour.
Remove the chicken from the broth and pour everything through a sieve. Skim off the fat. Pour half of the broth back into the pot (freeze the rest, if desired). Cook the pasta in boiling salt water. Skin and debone the chicken. Cut into bite-size pieces.
Blanch the tomato for a few seconds. Peel, quarter, core and cube the tomato. Add the peas into the broth and cook for 5 minutes. Heat the chicken and tomato in the broth. Add the pasta and season to taste. Serve garnished with lovage.
