200 grams Snow peas
2 Red Hungarian wax peppers
2 mild red chili peppers
1 onion
1 garlic clove
2 centimeters ginger
2 Tbsps Coconut oil
2 Tbsps green Curry paste
400 milliliters Chicken broth
200 milliliters Coconut milk
1 sprig Lemongrass
3 Tbsps soy sauce
1 handful cilantro
1 Tbsp Lime juice

Preparation steps

Rinse chicken, pat dry and cut into bite-sized slices. Rinse snow peas, trim and cut in half. Rinse wax peppers, cut in half, clean and cut into strips. Rinse chile peppers, remove seeds and cut into rings. Peel onion, garlic and ginger, cut onions into strips, garlic and finely chop ginger.

Heat oil in a wok and fry chicken on all sides until golden brown and then remove again. Add chile peppers, onion, garlic and ginger to the wok and stir-fry for about 2 minutes. Add curry paste, wax peppers and snow peas, mix and then add broth and coconut milk. Add lemongrass, trim and cut in half lengthwise. Add lemongrass and season with soy sauce. Cover and let simmer for about 5 minutes.

Rinse cilantro, shake dry and chop finely. Season curry to taste with soy sauce and lime juice and serve.
