1 Tbsp boiling water
1 Tbsp sugar
1 red chili pepper
2 garlic cloves
1 Tbsp Rice vinegar
1 Tbsp lemon juice
2 Tbsps Fish sauce
4 Chicken breasts
2 Tbsps dark soy sauce
1 garlic clove
1 tsp crushed red peppers
1 Tbsp Lime juice
½ tsp sugar
4 Tbsps vegetable oil
salt (from a mill)
Ground red pepper

Preparation steps

For the sauce: Peel garlic and press through a garlic press. Rinse chile, remove seeds and ribs and chop finely. Mix garlic and chile with boiling water, sugar, rice vinegar, lemon juice and fish sauce.

Rinse chicken and pat dry with paper towels. In a bowl, combine soy sauce, red pepper, lime juice and sugar. Add chicken and turn to coat. Marinate at least 30 minutes. Lift chicken from the marinade and let drain. Heat oil in a pan. Cook chicken breasts on both sides until cooked through, about 8 minutes.

Season chicken with salt and a little red pepper. Slice and serve with Thai sauce.

Serve with Thai jasmine rice, if desired.
