- 100 grams Pine nuts
- 4 Chicken breasts
- salt
- freshly ground peppers
- 3 Tbsps vegetable oil
- 1 garlic clove (finely chopped)
- 2 Tbsps chopped parsley
- 100 milliliters sherry (dry)
- 150 milliliters Chicken broth
- 1 bay leaf
- 3 thyme
- Ground clove
- Nutmeg
- 1 Tbsp lemon juice
- 300 grams Snow peas

Preparation steps

Toast pine nuts in a dry frying pan. Remove 2 tablespoons and place aside. Finely chop the rest. Season chicken with salt and pepper. Heat 2 tablespoons of oil in a pan and cook over low heat for about 10 minutes, turning as needed. Wrap in aluminum foil to keep warm.

Add 1 tablespoon oil to skillet and saute garlic and parsley while stirring. Add sherry, chicken broth, bay leaf, thyme and chopped pine nuts. Season with salt, pepper, cloves, nutmeg and lemon juice. Simmer for 5 minutes. Add chicken and briefly warm. Rinse snow peas, trim and cook for about 4 minutes in boiling salted water. Drain, rinse and drain. Arrange with chicken and sauce on plates and sprinkle with remaining pine nuts. Serve.
