- 2 Chicken breasts (skinless, 5-6 ounces each)
- 1 Tbsp olive oil
- 2 Beefsteak tomato
- 4 slices Gouda
- salt
- freshly ground peppers
- 4 slices Toast
- 4 lg leaves Lettuce
- 3 Tbsps Herb butter

Preparation steps

Preheat the oven to 200°C / 400ºF.

Rinse the chicken breasts, pat dry and saute for about 4 minutes in oil, on each side, until golden brown.
Rinse the tomatoes, remove the stalks and cut into 1/2-inch thick slices.
Lay half the tomato slices on a baking sheet lined with parchment paper. Cut the chicken breasts into slices and lay on top of the tomato slices, alternately with the cheese and the remaining tomato slices. Season with salt and pepper.
Bake for about 8 minutes.
Meanwhile, toast the slices of bread until golden brown. Rinse the lettuce and tear apart the leaves.
Spread the slices of toast with herb butter and top with the salad. Arrange the tomotoes and chicken on top and serve immediately.
