1 packet frozen Puff pastry dough (400 grams)
1 l milk
250 grams Rice
1 pinch salt
100 grams sugar
1 lemon (zest)
500 grams Cherries (pitted)
3 eggs
100 grams chopped Pistachio
1 egg yolk (to brush)
powdered sugar (for dusting)

Preparation steps

Defrost the puff pastry and separate the sheets.

Mix the milk with the salt, spices, and sugar. Cook the washed rice according to the directions on the package. Remove from heat and let cool until lukewarm. Fold in the cherries, eggs, lemon zest, and pistachios. Roll out the puff pastry on a floured surface to a rectangle, about 40 x 20 cm (approximately 16 x 8 inches). Spread the rice filling evenly over the rough. Roll the dough and brush with egg yolk and place seam side down on a parchment-lined baking pan. Bake in a preheated oven at 220°C (approximately 425°F) for about 45 minutes, until golden brown.
