800 grams Sour cherry (stemmed, pitted)
250 milliliters Cabbage
500 milliliters water
125 grams sugar
1 Vanilla bean
50 grams cornstarch
4 centiliters Rum
4 centiliters Amaretto
375 milliliters Whipped cream
2 Tbsps honey
40 grams almonds (roasted, sliced)

Preparation steps

Boil the water with the sugar and half the vanilla pod. Add the cherries and cherry juice, bring back to a boil and then simmer for 10 minutes.

Strain the juice into another pot and bring to a boil again. Mix the cornstarch with a little water until smooth and use it to thicken the juice.

Bring to a boil while stirring and add the cherries. Remove from the stove, pour in the rum and the Amaretto and then pour into a bowl to cool.

For the dressing, combine the cream with the honey and the remaining half vanilla pod and mix well.

Pour over the cherries and serve showered with the almonds.
