800 grams Spinach
1 Tbsp butter
1 garlic clove
1 Pastry flour
150 milliliters Vegetable broth
100 grams Whipped cream
salt
freshly ground peppers
Nutmeg
1 Tbsp lemon juice
60 grams grated Gruyere
butter (for the pans)

Preparation steps

1.

Rinse the spinach and blanch in boiling salt water. Drain, rinse in cold water and drain well. Coarsely chop the spinach and spread in buttered ramekins.

Saute the pressed garlic in hot butter. Stir in the flour and saute. Pour in the broth and cream, bring to a boil and simmer for about 5 minutes, stirring occasionally. Season with salt, pepper, nutmeg and lemon juice.

3.

Pour the sauce over the spinach. Sprinkle with the cheese. Bake for about 6 minutes at 220°C (approximately 425°F). Remove from the oven and serve immediately.
