3 Tbsps Pastry flour
¼ tsp Baking powder
2 eggs
1 pinch salt
50 grams sugar
2 tsps Lemon peel
300 grams Quark
clarified butter (for frying)

Preparation steps

1.

Rinse potatoes and cook in boiling salted water for about 25 minutes. Drain and peel potatoes and press through a potato ricer. Mix flour and baking powder and stir with eggs, salt, sugar, lemon zest and quark into potatoes. Let potato mixture rest for about 20 minutes.

Divide potato mixture into portions and press each portion flat on a lightly floured surface. Heat clarified butter in a skillet and fry fritters in batches until golden brown on both sides. Serve fritters immediately.
