1 onion
1 garlic clove
200 grams Celery root
200 grams starchy potatoes
3 Tbsps butter
2 Tbsps Pastry flour
150 milliliters dry white wine
750 milliliters Beef broth (or vegetable broth)
2 slices Farmhouse bread
300 grams mixed Cheese (such as mountain cheese, Gouda, Emmental)
100 milliliters Whipped cream
salt
ground Caraway
freshly ground peppers
scallions (for garnish)

Preparation steps

1.

Peel and cube the onion, garlic, celery root and potatoes. Saute in 2 tablespoons of hot butter until translucent. Sprinkle with the flour and pour in the broth and wine. Cover and simmer for about 20 minutes, stirring occasionally.

Cut the bread into small cubes. Cook in the remaining butter until golden brown. Drain on paper towels.

Cube the cheese. Remove the soup from the heat and puree. Gradually stir the cream and cheese into the soup. Depending on the desired consistency, let the soup boil down or add broth. Season with salt, caraway seeds and pepper.

4.

Serve the soup sprinkled with croutons and chives.
