- 1 Chard leaf (600 grams)
- 4 carrots
- 2 onions
- 250 grams Cherry tomatoes
- 2 garlic cloves
- 1 Tbsp green Curry paste
- 2 Tbsps Peanut oil
- 250 milliliters Coconut milk
- Lime juice
- soy sauce
- Thai basil (for garnish)
Preparation steps

Rinse and trim the chard leaves. Cut the stalks into pieces and leaves into strips. Peel the carrot and cut into matchstick-sized pieces. Peel the onions, cut in half and then into strips. Rinse and halve the tomatoes. Peel the garlic and cut into thin slices. Stir fry the carrots, onions and chard stalks for about 3 minutes in hot oil. Add the garlic and curry paste and sauté for about 1 minute. Next add the tomatoes, chard leaves and the coconut milk and mix well. Simmer for about 2 minutes and season with lime juice and soy sauce.

Serve garnished with Thai basil.
