Preparation steps

1.

Finely chop celery, and cook in a little salted water for about 25 minutes, or until soft and the water evaporates.

2.

Add the cream and purée very finely, then fold in the butter and season with salt and pepper and keep warm. Dust nutmeg on to serve.
