250 grams Arugula
1 red onion
1 Pear
100 milliliters Kefir
2 Tbsps olive oil

Preparation steps

1.

Cook lentils in vegetable broth for about 10 minutes. Drain and cool. 

2.

Rinse and spin dry arugula, cut out hard stems if necessary. 

3.

Peel onion and cut into rings. Cut pear into quarters, core and cut into wedges. Mix all ingredients and arrange on plates.

4.

Combine kefir and oil, season with salt and cayenne pepper. Drizzle dressing over salad and serve.
