- 2 cups white wine
- 35 ozs clam
- 35 ozs mussels
- 4 Tbsps olive oil
- 2 onions (chopped)
- 3 cloves garlic cloves (chopped)
- 1 red pepper (diced)
- 28 ozs Monkfish (cut into bite-sized pieces)
- 1 Saffron
- 1 bunch thyme
- 35 ozs Tomatoes (diced)
- 3 sprigs parsley (chopped)

Preparation steps
1.
Place the wine in a large pot and bring to the boil. Add the clams and the mussels, cover and cook for 4 minutes. Pour the wine into a bowl and drain the seafood.
2.
Heat the oil in a large pot and fry the onions, garlic and pepper for 5 minutes, stirring continuously. Add the fish and fry for a few minutes. Add the saffron and thyme and deglaze with the wine. Add the tomatoes and cook for 10 minutes. Season with salt and ground black pepper. Return the seafood to the pot and serve garnished with parsley.
