11 ozs turkey breasts
3 Tbsps vegetable oil
3 ½ cups vegetable stock
1 onion (chopped)
1 garlic clove (chopped)
3 ½ cups carrots (chopped)
2 Apple (e. g. Granny Smith, peeled, cored and diced)
2 Tbsps fresh parsley (chopped)

Preparation steps

1.
Rub the meat with salt and ground black pepper and fry on a high heat in 1 tbsp oil. Reduce the heat and cook for around 10 min. Cut into strips and keep warm.
2.
Deglaze the pan with some vegetable stock and fry the onion and garlic. Add the carrots, apples and enough vegetable stock to cover the ingredients. Simmer for around 20 min.
3.
Puree with a hand blender, add the remaining stock and bring to the boil. Season with salt, ground black pepper and a pinch of sugar. Serve in deep plates, add the turkey and serve garnished with parsley.
