- For the crust
- 200 grams Pastry flour
- 100 grams cold butter (in pieces)
- 50 grams Whipped cream
- 1 egg
- salt
- For the filling
- 1 garlic clove
- 1 bunch Basil
- 100 milliliters milk
- 3 Tbsps olive oil
- 200 milliliters Whipped cream
- 4 eggs
- salt
- freshly ground peppers
- 4 Tomatoes
- 2 balls Mozzarella (125 grams or 4.5 ounces)
Preparation steps

Preheat the oven to 200°C (approximately 390°F).

For the crust: Combine flour, butter, cream, egg and salt. knead into a smooth dough. Wrap in foil and chill for 30 minutes.

Puree peeled garlic, basil leaves, milk and 2 tablespoons of oil. Stir in cream and eggs. Season with salt and pepper. Rinse tomatoes and slice 1 cm (approximately 1/3 inch) thick. Drain mozzarella and slice.

Roll out dough. Grease a tart tin and line with the dough. Prick dough base with a fork several times. Pour in custard and top with tomatoes and mozzarella. Bake for about 30 minutes.

Remove from oven, Garnish with basil leaves and serve.
