Preparation steps

1.

Preheat the oven to 180°C (approximately 350°F) convection. Remove the husks from the gooseberries. Rinse and pat dry.

Whisk together the cream, eggs, almonds and 50 grams (approximately 1/4 cup) sugar. Set aside for about 20 minutes. Grease 4 small ramekins (about 10 cm) (approximately 4 inches) with butter and pour in the almond cream. Distribute the gooseberries over top, sprinkle with remaining sugar and bake until golden brown, about 20 minutes. Serve warm or cold.
