100 grams Smoked bacon (marbled, without rind)
2 slices Wheat bread
2 garlic cloves
6 Tbsps vegetable oil
1 large Romaine lettuce (about 500 grams)
100 milliliters olive oil (Extra virgin)
juice of lemons
2 Tbsps ground, blanched almonds
salt
freshly ground peppers
30 grams grated Parmesan

Preparation steps

Chop bacon and cook until crispy over low heat. Remove crust from bread and cut into 1 cm (approximately 1/2 inch) cubes. Peel and chop garlic. Remove bacon from pan and set side. Heat oil in pan, add bread cubes and cook until golden brown over medium heat. Towards the end of cooking time, add garlic. Drain toasted bread on paper towels. Rinse romaine lettuce and spin dry. Cut lettuce into strips about 2 cm (approximately 1 inch) wide.

Whisk olive oil and lemon juice with almonds. Season with salt and pepper. Toss salad in dressing. Grate Parmesan. Mix bacon with salad, sprinkle with croutons and Parmesan and serve.
