- 2 slices white bread
- 100 milliliters olive oil
- 1 garlic clove
- 1 tsp lemon juice
- 2 Tbsps White vinegar
- ½ tsp spicy Mustard
- 1 tsp Worcestershire sauce
- 1 egg yolk
- 1 Tbsp grated Parmesan
- salt
- freshly ground peppers
- 1 pinch sugar
- 250 grams Lettuce (such as Romaine)
- 40 grams freshly grated Parmesan (to sprinkle)

Preparation steps

For the croutons: Remove the crust from the white bread, dice and saute 2-3 minutes in 2 tablespoons hot oil until golden brown and crispy. Drain on paper towels.

For the dressing: Peel the garlic and place it in a blender and puree with the lemon juice, vinegar, mustard, Worcestershire sauce, egg yolk and Parmesan. Slowly add the remaining oil and puree until white-creamy, adding a little water if necessary. Season with salt, pepper and sugar.
3.
For the salad: Rinse the lettuce, spin dry and tear into small pieces. Arrange on plates or in bowls and drizzle with the dressing. Serve with the croutons and Parmesan.
